Chicken Creativity

I don't know about you, but food prices are continuing to soar, making visits to the grocery store a challenge on how to stretch the food budget without breaking the bank. So, here are a few suggestions on how to get the most out of a simple roasted chicken. I bought this rotisserie chicken for $8.00 at my local market. It became the basis for 3 meals for my husband and I!

Meal #2 - Strip the bird of all of the meat, discarding the skin but not the carcass (we'll get to that later) and try this easy chicken pot pie-www.nobadfoods.com/recipes/no-fail-no-fear-chicken-pot-pie

Meal #3 - Freeze the carcass. Then you can make homemade broth which is much healthier than most store bought brands which can cost about $4.00 a carton. I use this broth to make risotto, soups and, when added making rice or grains, the flavor is much richer. Another money saving tip is to save vegetable scraps when you are cooking. When I cut up carrots, onions, peppers, sweet potatoes, etc., for meals, I take the discarded ends and freeze them in a zip lock bag. So, this $8.00 little bird was a great value, went a long way in terms of meals and nothing was wasted. A win-win for the food budget!
