Apple and Arugula Salad

A salad with the sweetness of the apple and the peppery taste of the arugula, tossed with an apple balsamic vinaigrette. Perfect as a side dish to chicken or pork.

Ingredients

4 cups fresh arugula

2 Kirby cucumbers, sliced 1/2 inch thick

1/4 cup chopped fresh flat leaf parsley

1 Red Delicious apple, sliced into matchstick size pieces

2 TBSP extra virgin olive oil

1 TBSP Apple Balsamic Vinegar (not Apple Cider Vinegar)

Directions

Place the veggies, apple and parsley in a medium bowl.

Toss with the olive oil first (keeps the apple from turning brown)

Add the apple balsamic vinegar, combine thoroughly and enjoy!
