Only 2 ingredients that yield the best spread for pancakes, biscuits, scones or waffles. Much better than butter and syrup, you'll see!
3 cups fresh or frozen blueberries
1/3 cup granulated sugar
Place berries and sugar in a medium sized sauce pan.
Put heat on medium and stir until liquid surrounds berries.
Bring to a simmer.
Lower heat to medium-low.
Cook, stirring occasionally for 30 minutes.
Compote will thicken as it cools.
Remove from heat and cool.
Store in the refrigerator for up to 5 days and in the freezer for 3 months in air tight containers.
