Brown Sugar and Applesauce Bread

A guilt free breakfast bread that is low fat, low sugar and flavored with raisins, walnuts and unsweetened applesauce. Great for the kids, too.

Ingredients

2 cups all-purpose flour

1 teaspoon cinnamon

1 teaspoon baking powder

½ teaspoon baking soda

¼ teaspoon salt

1 large egg, beaten

½ cup firmly packed brown sugar, light or dark

1 ½ cups unsweetened applesauce

½ cup finely chopped walnuts

1 cup golden raisins tossed with 1 tablespoon flour

Directions

Preheat oven to 350 degrees F.

Spray a 9x5 inch loaf pan with canola oil.

Whisk together the flour, cinnamon, baking powder, baking soda and salt together in a large bowl.

In a small bowl, stir together the egg and brown sugar until thoroughly combined.  Add the applesauce and mix well.

Combine the applesauce mixture with the flour mixture, stir well and add the raisins and walnuts.

Pour into pan, smooth top and bake for 35 minutes.

Let sit for 15 minutes then remove from pan and place on wire rack to cool thoroughly.
