A low fat carrot salad with multi-colored shredded carrots combined with raisins, plain low fat yogurt and a pop of citrus. Excellent as a brunch side dish or as an addition to a slider or wrap.

Ingredients

3 cups freshly shredded multi-colored carrots

1/2 cup golden raisins

Juice from 1 orange and 1 lime to make 1/4 cup- see directions

1/4 cup plain non-fat Greek yogurt

1/4 teaspoon salt

1/4 teaspoon black pepper

Directions

Place carrots and raisins in a medium bowl.

Juice the lime first, then the orange to make 1/4 cup total. Reason - oranges are usually juicier than limes which is why you juice the lime first.

Stir the juices into the carrots and raisins.

Add the low fat Greek yogurt 1 tablespoon at a time, stirring gently but thoroughly after each addition.

Sprinkle the salt and pepper on top and combine.

Serve cold within 6 hours.
