Refrigerator biscuits rolled flat, topped with cheeses, sauteed veggies, fresh eggs, optional breakfast meats and baked. This is a great meal to get the kids involved!
1 tube of refrigerator biscuits (8 biscuits)
1 1/2 cups shredded cheese - cheddar, pepperjack, monteray jack, swiss are all good options
1 cup red bell pepper chopped into 1/2 inch pieces
1 cup sweet onion chopped into 1/2 inch pieces
1 TBSP butter
8 large eggs
1/2 tsp black pepper
Optional - 1 1/2 cups breakfast sausage cooked and crumbled or 1 1/2 cups diced ham steak
Canola oil for spraying
Preheat oven to 425 degrees F
Line an extra large sheet-pan with foil, spray lightly with Canola oil spray.
Melt butter in a medium skillet. Saute onions and peppers until translucent. Set aside.
Roll out biscuits to a 6 inch circle and place on sheet-pan.
Evenly spread cheese over the biscuits.
Spread veggies over cheese, then add meat if using.
Make a well in the center of the veggie and meat mound.
Carefully crack one egg at a time, pouring it into the well. Yes, it might run over but that's okay!
Sprinkle the black pepper over the biscuits, place in the oven and bake for 14 minutes for a soft yolk, a few more minutes if you like your eggs cooked a little more.
