A wonderfully flavorful pork tenderloin that is pan seared, finished in the oven and topped with a warm fruit jam.
Great served with sweet potatoes and a green vegetable.
1 pork tenderloin, trimmed of all fat and silver skin
1 1/2 TBSP olive oil
1/2 tsp EACH salt and pepper
Optional - 1/2 cup warmed fruit jam or chutney
Preheat oven to 400 degrees F.
Coat meat on all sides with salt and pepper.
Heat oil in an oven proof skillet until shimmering but not smoking.
Sear meat on all sides until lightly browned.
Place skillet in oven, bake for 15-17 minutes or until a meat thermometer reaches 145 degrees F.
Remove from oven, place meat on cutting board and tent for 5 minutes.
Slice into 1/2 thick pieces and top with warm fruit jam/chutney if using.
